Since the beginning of 2014, I’ve been TRYING to eat healthier options.. But I will admit, I have a bit of a sweet tooth. So I thought making Bliss Balls would be a great option. Plus their dairy and gluten free – which means Michael can eat them too.

These treats are healthy AND delicious. They’re perfect for a snack, dessert or even to keep at work for when three-thirtyitis hits. We keep them in the freezer, so that they don’t tempt us – it’s hard to stop at one. Everything in moderation is the key!

They’re covered in coconut, and look kind of like mini lamington balls.. They’d be perfect for Australia Day next weekend as a healthy option at any celebration!


You will need:
1 Cup Pitted Dates
1 Cup Raw Almonds
1/3 Cup Cocoa Powder
1/3 Cup Coconut Oil
1/2 Cup Shredded Coconut
Food Processor

Method
Soak the dates in boiling water for approximately 15 minutes, until soft.
Place almonds, cocoa powder, coconut oil and 1/3 cup of the coconut into the food processor and mix.
Add the date and blend together. 
Roll mixture into bite size balls, then roll in the remaining coconut.
Store in the fridge or freezer and enjoy!
